Saturday morning Pancakes

This morning I made Pancakes for breakfast.

This was an experiment that I have wanted to try for a while and I must say they turned out really good and EVERYONE liked them.

Gluten Free pancakes

3 cups of oat flour (I used old fashion oats put one cup at a time in the blender
until it was flour. Zoey helped me with this part)
3 tablespoons of baking powder

2 tablespoons of sugar

2 eggs

and milk (I did not measure the milk just added till it was pancake consistency)

They seemed to cook faster then regular pancakes so keep a close eye on them. I burnt one batch.

They were great! Noelle's I separated before I added the milk and added water and her powder milk substitute to hers. You could also sub the milk for rice milk or soy if you cant have milk.

February = Sick

Well the month of February always brings sickness with it here at the Jackson house.
Three weeks in and this is how it went down...

Zoey got sick on a Thursday it lasted a week and a half...

Cyann got sick with a rash on the same Thursday night lasted two weeks and counting...

Noelle got sick a week later with a cough lasted one week and counting...

Zoey the doctor thinks she had RSV. Cyann had Fifths disease and RSV. Noelle had Croup and possibly RSV too.

Mommy getting sick now that everyone is getting better.

Im in need of a vacation in the sun. :)

I must apologize for the long break from the blog world. I had some computer problems and other things I have had to take care of.

New Year Resolution

I have been working on my New Year resolution it is, and yes I only have one this year, to keep the laundry and house clean. Like not do all the work on one day of the week but do it through out the week. I found that most of my stress stemmed from the house work so I decided that if I could reduce that stress it would be best for all involved.

How have i done so far? Well I think I have done well. Not great but right now there is only yesterdays laundry which will get washed and folded tomorrow with todays laundry, and kitchen and living room are clean.

I have been very happy with the results of this resolution.

The Kids
The kids are doing great! They have not been sick much this winter so I have been very thankful for that. They have been sick three times but not all at once, one will get something but no one else will so that has been nice to have short illnesses.

Noelle is doing really well, she is self feeding now, most things. Her Doctor G gave her a great report in January, he said she is growing well and developing at a steady rate that he is pleased with. Oh my Mommy heart likes to hear those wonderful word.

Cyann is GROWING. She is eating everything, crawling everywhere, and did I mention growing.

Zoey is growing up so fast, I must admit that three is a hard age. She and I don't see eye to eye very much so it has been very challenging for me. But God is working in both of our hearts.

I am 23 weeks due June 18th. Still don't know what we are having but Jon is playing it safe and saying it is a girl but we don't know so You have to wait with us. :)
Doctor has put me on blood pressure meds to try and keep that down to an normal level this time. I am praying that will help the baby grow big and strong. Jon keeps telling me to be careful what I pray for I might end up with a hug baby but really I am scared that what happened with Cyann will happen again. I really don't want to do that again so a big and strong baby is my prayer.

Well I have a lot more to say but I will save that for another post so stay tune.
