****I want to preface this post with the acknowledgment that many many people deal with the food issues mentioned in this post and they do a wonderful job, this is just me trying to figure it all out****
Yes I am scared of Noelle's diet or I was scared of it.
I don't at all like change. I like spontaneity but I don't like change when it comes to the hard and fast rules of my life, like FOOD. I had no experience with food intolerance, I did not know there was a difference between an intolerance and allergies but I have learned, and at times not willingly.
Noelle is not able to have: Cow dairy, Gluten, Soy, and Cinnamon I am still wondering about Eggs not sure yet.
In addition to intolerance to the above list she has a tendency to develop intolerance's to things that she eats to much of. So to prevent that from happening I rotate her grains and proteins. For example I don't give her the some grain or protein more than twice a week, Monday Wednesday she might have chicken but Tuesday Thursday she would have beef and Friday Sunday would be pork or fish and Saturday would be a vegetarian day. Yeah I know kinda crazy to keep track of but I am making it work and we can be a little flexible.
I say all that to say the Gluten free thing really was hard for me to grasp. I understand what it is and what she can and cant have it was the everyday cooking and baking that I had a hard time figuring out.
But rest assured I think I have it now and I am inventing my own recipes. I have found that Noelle can have Oats (which are gluten free if you buy the right brand). So I have made pancakes, muffins, chocolate chip cookies, and fruit cobbler all with oat flour and Noelle is loving the new additions to her diet.
And my new find is Chick fil a will make chicken strips without the breading for you in a kids meal or any meal (no extra cost). I was so happy to find this out we can go out to eat at the kids favorite place without packing a meal for anyone. Also Noelle is starting to figure out that she is not getting what everyone else has so it is getting harder to eat things that she cant have with out a good look alike sub for her. You cant really tell a 2 year old the consequences of eating ice cream, they don't get it yet, So most places have a non dairy cool whip that they will give you instead of ice cream and every time I have asked they have given it to me for free.

Good to know about the non dairy whip cream! Thanks! I think the eating issues with RTS are the hardest partof all this!
Wow. That's so much to think about considering most people don't even think about their food! You're such a good little Mommy.
